This is a second post for finding Gluten Free goodness for less at Wal-Mart.  Be sure to read my other post on some more Gluten Free items from Wal-Mart.

I was selected to buy specific items from a list of gluten-free products which are available at Wal-Mart.  This post highlights the item I chose from the list for More Gluten Free goodness for less at Wal-Mart.

For this second recipe, I selected the Blueberry flavor of the PB & J Bars.  I wanted to see how I could use this product in a different way.

Since the product is made with oats it got me thinking.  I have been in the mood for a Fruit Crisp so I decided to see how this bar would work.

I ended up using two of the bars as a substitute for the rolled oats in the Fruit Crisp recipe.  I used my food processor and it crumbled well.  I was worried it might be too sticky.  It was not.

While this was in the oven baking, the house began to smell so wonderful!  The kitchen had the scent of nutmeg lingering as I used freshly grated nutmeg in the recipe.

This was a fun dessert to make.  Yummy!

My boys loved it.  The 11-year old said, “This was good!”  The 3-year old and 4-year old both ate theirs up.  We all enjoyed this ala mode.

Here is the recipe for my Gluten-Free Blueberry Crisp with Blueberry PB & J Bars:

Gluten-Free Blueberry Crisp with Blueberry PB & J Bars

A Blueberry Crisp topped with crumbled PB & J Bars.
Ingredients
  • 5 cups fresh or frozen blueberries
  • ¼ cup granulated white sugar
  • 3 Tablespoons tapioca starch
  • ½ cup to 1 cup (about 2-4) Blueberry flavored PB & J Bars
  • ½ cup packed brown sugar
  • ¼ teaspoon nutmeg
  • ¼ cup butter
  • ¼ cup coconut flakes
  • Vanilla ice cream or whipped cream (optional)
Instructions
  1. Preheat oven to 375F.
  2. For filling:
  3. Measure blueberries.
  4. Stir into blueberries the granulated white sugar and tapioca starch.
  5. Place fruit into an 8x1½-inch round or square baking dish.
  6. Using food processor, crumble PB & J Bars.
  7. Stir into the PB & J Bar crumbles, brown sugar and nutmeg.
  8. Cut in butter until like coarse crumbs.
  9. Stir in coconut.
  10. Sprinkle topping over filling.
  11. Bake for 30 to 35 minutes (40 minutes for thawed blueberries) or until blueberries are tender and topping is golden.
  12. Serve warm with ice cream or whipped cream, as desired.
Notes
If fruit is frozen, let thaw. Do not drain.

How many PB & J Bars depends upon how much liquid the blueberries have. I used a ½ cup and could have used ¾ cup to 1 cup due to the excess liquid.

May use dairy-free substitute for the butter.

Dairy-free versions may be substituted for ice cream or whipped cream.

I would love to hear if you have tasted the PB & J Bars.  My boys love them.  They are a great snack when we are on the road or when the little ones need something to eat.

I was selected to buy specific items from a list of gluten-free products for less that are available at Wal-Mart.  This post highlights the items I chose from the list.  Read my other post on another gluten-free product I selected to post about today.

I selected to use Udi’s  Gluten Free Uncured Pepperoni Pizza and Glutino Chocolate Cookies.  Actually, I purchased both Glutino Gluten Free Chocolate Chip Cookies and Glutino Gluten Free Chocolate Vanilla Creme Cookies.

I made lunch for my little boys (ages three and four).  They loved the Udi’s pizza.  I like that Udi’s is safe for my family and tastes great!

I also made homemade milkshakes using vanilla bean ice cream and the Glutino Chocolate Vanilla Creme Cookies.  I asked my boys to pick which cookies I used for their milkshakes and that is the variety they chose.  (This is also the variety that is in the photograph.)

A homemade milkshake that goes great with pizza, steak & fries, or just because it is a yummy drink.
Ingredients
  • 2 scoops Gluten-Free Vanilla bean ice cream
  • 3 Glutino Chocolate Vanilla Creme Cookies, crushed
  • 8 oz. (1/2 cup) 2% milk (or as needed for desired consistency)
Instructions
  1. Crush cookies in food processor or in blender.
  2. Add ice cream and cookies to blender.
  3. Add enough milk to allow blade to blend.
  4. Use milkshake setting on blender until desired consistency.
  5. May need to add additional milk to thin.
Notes
Dairy-free ice cream and milk substitutes may be used. Consistency and taste may differ based on ingredients used.

While I do not make lunch like this on a regular basis, my boys enjoyed the treats of Udi’s Gluten Free Uncured Pepperoni Pizza and a Homemade Milkshake using Glutino’s Chocolate Vanilla Creme Cookies.  I wanted a photo of them eating this meal.  However, by the time I got my camera, the pizza was gone as were the milkshakes.

February’s challenge:  Nutella is the Special Mystery Ingredient!

I was having difficulty figuring out what to make with peanut butter and Nutella.  When considering which recipe initially to use with Nutella, none of them felt like they would have worked using Nutella as a substitute ingredient easily.

What to make for the challenge?

For my contribution to February’s Peanut Butter Bash, I made a recipe that I found on Noshing with the Nolands.  This recipe for Nutella Clusters looked yummy.  Reading the ingredients I knew that I could make this gluten free.  I liked that these are No Bake Cookies.

When these Gluten-Free No Bake Peanut Butter Nutella Clusters were done chilling, I had to remember to pull some aside for a quick photo.

Why?  The six of us liked them.  We liked them a lot.  They were so good I was afraid the entire cookie sheet of them would be gone before I could get a pic.

My two little boys (almost three and four) loved being able to grab them off of the cookie sheet.  The two-year-old began handing out the cookies to the rest of us.  It was cute.  We ate them faster than I anticipated.

I am glad that I doubled the recipe so that we had a full cookie sheet to eat.  I know that I will be making these again.

Just three ingredients for these Gluten-Free No Bake Peanut Butter Nutella clusters!

For ingredients, I used Nutella, Nestle Peanut Butter & Milk Chocolate Morsels, and Gluten Free Cafe Maple Buckwheat Flakes.  There are plenty of options for the baking morsels (flavors and brands) as well as the cereal flakes (corn or buckwheat, for example).

Be sure to check the labels to make sure the products are gluten free if not clearly stated on the front of the item.  The baking chips may also contain barley (which is a gluten-containing ingredient).  If you are avoiding artificial food colors, these Nestle baking morsels are free of them.  (My boys do not eat the artificial food colors so that is something I check for on each label.)

Gluten-Free No Bake Peanut Butter Nutella Clusters

Fast and easy to make gluten free no bake cookies that are full of flavor.
Ingredients
  • 3 oz. (90 grams) Nestle Peanut Butter & Milk Chocolate Morsels
  • Scant ½ cup (120 grams) Nutella
  • 1¾ cup (40 grams) Gluten Free Cafe Maple Buckwheat Flakes
Instructions
  1. Melt the peanut butter & chocolate morsels in a saucepan over gentle heat.
  2. When melted, remove from heat.
  3. Gently stir in buckwheat flakes and mix carefully.
  4. Place small amounts of the mixture on a piece of parchment or wax paper.
  5. Chill for at least 2 hours before serving.
Notes
I used wax paper placed on top of a cookie sheet (with sides).

I measured the ingredients by weight.  I gave both standard and metric amounts for each ingredient.  The blog post I found this recipe on gave both sets of measurements as well.  I began weighing my food (especially the gluten free flours) in 2012.

So, whether you prefer to weigh your food or are used to the metric measurements, both are available for you.

January’s challenge:  The special mystery ingredient is oatmeal!  Oatmeal and peanut butter got me thinking…

For my contribution to January’s Peanut Butter Bash, I chose to make my Uncle Byron’s Oatmeal Cookies that can be found in my book, The Gluten-Free Way: My Way.

Normally, I make this recipe with Crasins and chocolate chip cookies as it is in my book.

Since this is for the Peanut Butter Bash, I used both chocolate chips as well as Reese’s Peanut Butter Chips. I had planned on adding the Crasins. Unfortunately, we are out. So, I added extra chocolate chips. I used just 1/4 cup of the Reese’s Peanut Butter Chips so that the peanut butter did not overwhelm the oatmeal.

These cookies are great and do not taste different just because they are gluten-free.
Ingredients
  • ½ cup shortening or butter
  • 1 cup brown sugar
  • 1 cup (140 grams) gluten-free flour
  • ½ teaspoon salt
  • ½ teaspoon ground cloves
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • 2 Tablespoons milk
  • 1 teaspoon gluten-free vanilla
  • 1 large egg
  • 1-1/2 cups gluten-free quick cooking oats
  • ½ cup nuts (optional)
  • ½ cup raisins or Crasins (optional)
  • ¼ cup gluten-free chocolate chips
  • ¼ cup Reese's Peanut Butter Chips
Instructions
  1. Preheat oven to 350F.
  2. Lightly grease cookie sheet (or use a silicone baking mat).
  3. Cream together the shortening and brown sugar.
  4. Add all dry ingredients except for the oats.
  5. Mix well.
  6. Add the milk, vanilla, and egg. (Do not over beat.)
  7. After all is mixed well, add in oats and raisins (Crasins, chocolate chips, Reese's Peanut Butter Chips, or nuts).
  8. Spoon rounded teaspoons of cookie dough onto a greased cookie sheet.
Notes
Note 1: Gluten free flours vary and cookies may spread out some.
Note 2: Dairy free milk and butter may be used. Cookies may be slightly different in color due to the differences in consistencies of milk.
Note 3: May be made egg free using an egg substitute.

Remember, gluten free does not have to equal taste free.

November’s challenge:  The special mystery ingredient is pumpkin!  Pumpkin and peanut butter?  I know what you are thinking:  Is it possible to combine these two ingredients together and still have a good tasting dessert?!  Yes, it is possible!

For my contribution to November’s Peanut Butter Bash, I chose to make my Grandma Olive’s Big Pan Brownies that can be found in my book, The Gluten-Free Way: My Way.

I decided to use canned pumpkin instead of the oil to work the pumpkin into the dessert.  The batter turned out thicker than normal and did not rise as much as it usually does.  Next time, I will probably use half of the oil called for and pumpkin for the rest.

Gluten free brownies that do not taste gluten free.
Ingredients
  • 2 cups sugar
  • 4 eggs
  • ¾ cup canned pumpkin
  • 1 cup (140 grams) of gluten free flour
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 350F.
  2. Grease 13 x 9 x 2 baking dish.
  3. Combine ingredients and stir until mixed.
  4. Pour into greased pan and bake until toothpick comes out clean.
  5. Let cool. May serve warm. Top with optional ice cream, whipped cream, or frost with favorite icing.
Notes
May substitute the ¾ cup canned pumpkin for ¾ cup oil May also use both pumpkin and oil for a combined total of no more than ¾ cup.

Crust on top of brownies tend to crack. If the crust cracks, it is most likely done.

The frosting is Alton Brown’s Chocolate Frosting using Reese’s Peanut Butter Chips instead of semi-sweet chocolate chips.  Please check out the recipe at my Reese’s Peanut Butter Chips Frosting post.

On the top, I placed quartered Reese’s Peanut Butter Cups in the center of each potential piece.  That finger in the photo is my son’s as he is excitedly pointing out the Reese’s Peanut Butter Cup pieces all over the frosting.  He was waiting for his piece.
